The 40 heroes of Flight 93 …

Good evening!!!

   I just got done watching the 2 hrs movie "THE FLIGHT THAT FOUGHT BACK"  a re-enactment of the 40 people aboard United Airlines Flight 93 in Discovery Channel. My habibie tried to stay up till 10 pm watching it–we thought that it will be done in an hour and he give up; he need to go to bed to work tomorrow.

    I was crying really hard (bakho pa gyud) on the part when the family member were interviewed by Tom Brokaw. Discussing how much they misses thier loved ones; all the I LOVE YOU PART  messages left on the phone and their last conversation… so-so-so heartbreaking. The thoughts that the person said I love you— will be gone forever makes me cry harder. They may all rest in peace–people who died from Sept. 11, 2001 and the victims of Katrina.

     I wish I had told my parents I love them while they were still alive… di kasi kami nasanay. We showed/express our love by obeying what is being told us to do; and with hugs but no "I love you"

     Bianca Ann was so cute, she saw me crying—she handed me a kitchen towel (could not reach the tissue on the counter) and comforted me–telling me its okey mommy..daddy is upstairs. Crazy me… I did cried more when I think of my hubby and Bianca Ann…

    Okey gotta go I need to check my new personal website created by Nelly Lane!!! yahoo!!! ANd I will share it to you ALL as soon its ready for public viewing…Daku nga salamat Nelly— God Bless you more for your kindness!!!

Morning:

   Billy was kicked out of our bed early at 3:30 am due to Bianca Ann went to our bed, got up and left early at 5 am. At around 5:30 am I heard a big thunder— just like somebody drop a bomb or something… it was scary sound to hear. Good thing I got Bianca Ann with me on my bed so I did not worry that much of her being scared of the loud thunder.

When we got up Bianca Ann was in a happy mood— I thought get a camera took pic of her smiling and do some posing too. I was fixing to do a laundry–she saw daddy’s uniform in the laundry basket—she tried on it and Daddy’s boots..took a pic of her too. She was so cute…

Lunch:

   Since it wa raining and cold. We just stayed inside the house, watched a movie princess stories together— and went take a nap at 1:30 pm.

Afternoon:

    I was awaken with my cellphone ringing… got up it was Gina. I had youghort for lunch…then decide to prepare the dinner while Bianca Ann still napping. I thawed a frozen dinner roll (I love the smell of dinner roll baking reminds me of bakery in Calbayog) I did get ready the Chicken Wrap for our dinner; it s a chicken breast with Zucchini, carrots, mushroom and spices wrapped-in a foil. I got this recipe from the aluminum foil label—Billy love this..I usually ate it with corn bread but thought use dinner roll instead for tonight. Had dinner at 6 pm…

Evening:

Gina called asking to accompany her to ER feeling apin on he rleft side —we went there at 9 pm till 12 midnight. She had ultrasound–result was fine and the Doc said she must have just a pulled muscle or a stress with her 3 kids under 5 years old. AM just glad too nothing serious with her health–she just need a bed rest…

While typing this blog Bianca Ann wakes up and she was on her way to our bedroom— called her before she wakes up daddy again. She asked me to turn the PC off and go na-night on her bed. Gotta go she is waiting..

Dad’s Meatball Soup

Ingredients:

2 cans (14 oz each) beef broth

2 cans (14.5 oz each) Hunt’s Diced Tomatoes with Roasted Garlic

1 teaspoon Italian seasoning

3/4 cup uncooked orzo pasta (or other small pasta)

1 pound, frozen cooked meatballs

2 cups frozen mixed vegetables (carrots, beans and corn)

2 cups water

Direction:

1) Blend together broth, tomatoes, seasoning and 2 cups water in a 6-quart saucepan. Bring to a boil.

2) Add orzo (any small pasta) meatballs and vegetables.

3) Return to a boil; reduce heat and cover.

4) Simmer 10 minutes or until pasta and vegetables are tender.

*** I got this recipe from the label of Hunts Diced tomatoes with Roasted Garlic…this is so good this cold season. Billy dont like the frozen meatballs so I have to make mine from scratch…and we ate this soup with corn bread muffin—ang sarap-sarap!!!***

   I was trying to finish my ironing last night which I had not finish due to Bianca Ann waking up crying from her sleep— so thought lay down with her to comfort her… it works and I woke up 8:30 am the next day. We missed the bus for the first day of school— we usually go see the neighbor kids get on the school bus. But we made it on the afternoon–watch them getting off the bus and they all happy to see us waiting for them—

While I was ironing last night I had my TV on TFC featuring the KONTROBERSYAL of Boy Abunda (is from Eastern Samar) they were talking about prisoner who have make their MANOY BIG by injecting Petroleum Jelly on it (ouch!!) I thought that was STUPID and CRAZY!!! I was giggling while listening to the testimony of Bangis who had his Manoy done– how they really become big that his wife told him to make it smaller kasi nahihirapan daw siya–I BET!!! I feel SORRY for those who got infected their Manoy for doing it (ouch again..)—chance of getting IMPOTENT!!! On my own opinion people should KNOW/LEARN that its not how BIG or SMALL their parts are IT’S HOW THEY DO THE JOB— making their partner a QUEEN or PRINCESS of thier lives!!!!!

Beef Caldereta

1 lb beef round, cut into chunks

1 medium potato, cut into chunks

half teaspoon salt

1 bay leaf

1 siling labuyo, sliced or half tsp chili sauce

1 pouch (200 g) Del Monte Caldereta recipe sauce

half cup cooked or frozen green peas

1/4 cup liver spread

1 each red and green bell pepper, cut into strips

1) Simmer beef chunks in 1 and half cups water until tender.

2) Add potato, bay leaf, half teaspoon salt and siliing labuyo.

3) Cook for 10 minutes.

4) Add the Caldereta recipe sauce, green peas, liver spread and bell peppers. Simmer for 5 minutes.

Beef Hash for Breakfast

4 tblsp butter

4 tblsp olive oil

2 cups diced onion

2 and half cups diced, unpeeled boiling potatoes

4 cups diced leftover steak, roast, ham or turkey

salt and freshley ground beef

2 teaspoon Worcestershire Sauce (optional)

1) Warm 1 tablespoon of the butter and 2 tablespoon of the olive oil in a saute pan ove medium heat.

2) Add the onion and saute’ until golden, 15-20 minutes set aside.

3) In a large saute’ pan, heat the remaining 3 tablespoons butter and 2 tablespoons olive oil and add the potatoes.

4) Cook over medium-high heat, stirring often, until the potatoes are browned and crusty, about 15 minutes.

5) Add the reserved onion and the beef; and cook until the mixture is crusty and browned, about 10 minutes longer.

6) Season to taste with salt and pepper and mix in the Worcestershire sauce, if using. Serve with poached or fried eggs.

*** we have beef hash for breakfast this morning… I use my left over steak. You can use also ham or sausage… love it with the worcestershire sauce.***

Mexican Wedding Cookies

1 cup butter, softened

half cup C&H powdered Cane Sugar

1/2 teaspoon vanilla

2 cups all-purpose flour

1/8 teaspoon salt

2 cups finely chopped walnuts or any nuts you like

About 1 1/2 cups C&H powdered Cane Sugar for coating.

1) Preheat oven to 350 degree.

2) With electric mixer beat butter and half cup powdered sugar, then add vanilla.

3)In a different container combine flour, salt and walnuts; stir into sugar mixture.

4) Roll dough into 1-inch balls. Place on ungreased cookie sheets.

5) Bake 15 minutes until lightly browned. While hot, roll in powdered sugar.

6) Cool on a rack then roll again in powdered sugar to coat.

*** My neighbor Sandra make this on Bianca Ann’s birthday…I feel in love with this cookies…it reminds me of polboron. One time I was going through with all the recipe on the canned food and box label (this is by the way how I get some of my recipe) found this recipe on the box of C&H Powdered Cane Sugar…and thought make it for the potluck of the Calbayognons. They all love it..one lady a tagala she said parang espasol rin daw..dont know whats espasol is…Mexican wedding cookie is very easy and yummy—-

Beef Steak Filipino style…

6 slices tender steak

1/4 cup lemon juice

1 tsp salt

1 medium onion, sliced

1 tbsp soy sauce

1 tsp freshly ground black pepper

2 tblsp cooking oil

1) Mix lemon juice, soy sauce, salt and pepper; marinate steak

2) Pan fry in oil. Watch out with the burning splatter…

3) When steaks are done, remove from pan into serving dish.

4) Add about 2 tblsp oil to the remaining oil, fry the onion till tender. Garnish on top of steak and serve hot!!!!

*** this is one of my favorite filipino dish–naglalaway ak while typing this recipe-slurrpp***

Chicken Afritada

1 lb chicken wings/legs

2 small potatoes, cut into chunks

1 small carrots, cut into chunks

1/3 cup cooked or frozen green peas

1 cup sliced green beans

1 small red bell pepper, cut into strips

1 tsp iodized salt

1 pouch Del Monte classic afritada recipe Sauce

1) Simmer chicken in 1 to 1 & half cups of water with 1 tsp iodized salt for 20 minutes or until meat is tender.

2)Add potatoes and carrots, cook for 10 minutes.

3) Add green beans, bell pepper and Del monte classic recipe sauce. Cook for another 5 minutes and enjoy….

*** Nelly I can get you Afritada sauce mix here in WA–if you cant find one in your Filipino store. Let me know ok?
